Mayocoba Beans
also called Peruano
- 1 pound of dried beans
- 8 cups water
- 1 tbsp salt
- 1 tbsp olive oil
Rinse the beans well under plenty of cold water.
Soak overnight (8 hours).
Drain and rinse.
Boil water with oil.
Add beans.
Bring to boil.
Lower heat to simmer, cover pot.
Simmer for 90 minutes.
Add salt for final 5 minutes of cooking.
Serving Suggestions:
Garnish with fresh pico de gallo and grated cotija cheese. Maybe a sprig of cilantro.
I like to add a sprinkling of ground dried chipotle pepper. [view image]
Lentils
- 1 pound dried lentils
- 8 cups water
- 1 tbsp olive oil
Rinse well with plenty of cold water.
No soaking nor salt required.
Bring water and oil to boil.
Add lentils.
Bring to boil.
Lower heat to simmer, cover.
Simmer for 20-30 minutes.
I add 1 tsp salt for the last 5 minutes of simmering.
Serving Suggestions:
Season with curry powder and Bragg's Liquid Aminos.
A dab of plain yogurt.
Garnish with chopped tomato and onion.
Puree with tomato and curry.
Quinoa
- 1 pound dried quinoa
- 8 cups of water
Rinse very well.
DO NOT soak.
[optional] toast in a tsp of olive oil over medium-high heat for a minute — just long enough to notice a slight color change.
Add water, bring water to boil.
Reduce to simmer, cover.
Simmer for 15 minutes or until fluffy.
Remove from heat and let stand for 5 minutes, then fluff with a fork.
Roasting Chili Peppers
Roast over open flame, under a broiler or in a heavy skillet until blackened and blistered but not burnt.
Place roasted chilis in a covered bowl for 5 minutes so the steaming can loosen the skin.
The skin should pull off easily after steaming.
Slit the side so you can remove the seeds and veins.
Storing Cilantro
Keep leaves dry.
Snip of the bottom of the stems.
Place the stem ends in a jar with water.
Cover loosely with plastic bag.
Store in refrigerator
Lasts two weeks.

Red Beans
- 1 pound dried red beans
- 8 cups water
- 1 tbsp olive oil
Soak overnight in 3x their volume of water. Remove any beans that floated to the surface during the soaking.
Drain and rinse.
Bring water and oil to a boil.
Add beans.
Bring to boil.
Lower heat to simmer, cover.
Simmer for 1 hour. (maybe longer?)
Add 1 tsp salt for final 5 minutes of cooking.
